Scope of Improvement of Tea Quality during Manufacturing- Case Studies

Abstract

Quality of tea refers to the sum total of internal and external factors, manifested in the development of aroma/flavour, strength, colour, briskness and character of infused leaf. Each of these attributes is known to change with variations in geographical and climatic conditions. Depending upon the intensity of each of the attributes, CTC teas produced in North East India are broadly categorised into Assam, Dooars-Terai and Cachar, each having distinct regional characteristics. An attempt has been made in this paper to highlight the observations from case-studies carried out in 30 factories in Assam, Dooars-Terai and Cachar regions. Minor changes within the existing factory setup could help in overcoming the barriers towards enhancement of quality from these regions.
